The coffee is a result of the El Indio program, where smallholder farmers in Planadas manage their own cultivation, harvest, milling, and processing with guidance from Cofinet. Cherries are sorted and sun-dried until ideal moisture levels are reached, then gathered at ASOPEP for export or local sale. This exceptional coffee boasts flavors of ripe purple fruits, strawberry jam sweetness, and a lingering taste of rum and raisin chocolate.

PROCESS: Natural

BREWING TIPS

  • 20 grams Coffee (medium grind)

  • 300 ml Water (~96°C)

For this coffee, we suggest using a ratio of 1 part coffee to 15 parts water, and aiming for an overall brew time of 2:10 minutes. This brew ratio is also a great starting point if you're brewing using an Aeropress, French Press (Plunger), Batch Brewer or Chemex.
